On My Table: Turkey Burgers + a sort of Caesar Salad
April 09, 2011 / On My TableWith the warm weather sort of arriving, I am always more inclined to eat healthier, lighter meals. I had a craving for a turkey burger the other day, but I only ever enjoy, homemade turkey burgers….restaurant and store-boughts, just don’t cut it. So home I went, with some lovely ground turkey in hand. I had some romaine lettuce in the fridge, so I thought I would do a homemade ceasar dressing alongside….but I was feeling creative and healthy, so I added fennel, instead of croutons. Oh, and PS, when I do add croutons, only homemade will do….again, such a cinch, why would you buy those gross store bought kinds?! If you are interested in hearing how I make my homemade croutons, let me know and I will gladly provide a recipe.
Ingredients for turkey burgers:
- 1lb of ground turkey
- 1/2 cup of bread crumbs
- 1 egg
- 2 cloves of garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup of chopped Italian (flat leaf) parsley
Ingredients for Sort of Caesar Salad:
- 1 bunch of romaine lettuce, washed, dried and torn into small bite size pieces, by hand (don’t cut the lettuce with a knife, it bruises the leaves)
- 1 fennel, chopped
Dressing:
- 1/2 cup of olive oil
- juice of one lemon
- 1/2 cup of freshly grated parmesean cheese
- 2 cloves of garlic, minced
- 1 can of anchovies, finely chopped
- 1 teaspoon of worchestershire sauce
This is what you need for the burgers. Some great breadcrumbs, garlic, and egg, parsley.
Start with the ground turkey in a medium size bowl.
Add garlic, parsley, egg, and breadcrumbs to ground turkey. Salt and pepper to taste, which is usually one teaspoon to 1/2 teaspoon, respectively.
Get in there with your clean, bare hands and mix it all together. Cover with plastic wrap, and place in fridge till you are ready to grill.
Prepare lettuce and fennel. Set aside.
In a small bowl, add olive oil, garlic, anchovies, lemon, parmesean. I like to use a hand blender to combine the ingredients, so it is kind of creamy, but you can just mix with a fork, that will do.
Set dressing aside.
Turn on the grill or bbq to medium-high heat. Set the table, and we are almost there!
I grease my grill pan with grapeseed oil, so not to stick. Grapeseed oil burns at a higher heat than most other oils (olive oil), so no burnt taste on food. To make the patties, I simply take some ground turkey, form a ball and flatten in my hand. Then place it on the grill.
After about five minutes, you can flip the burgers. After 10-12 minutes your burgers should be cooked. Assemble and toss the salad. Plate meal and serve.
